Do not make exit opportunities the core of your "why consulting" answer. Interviewers want to understand why you want the work and environment you are applying to now, not only what the brand may unlock later.
It is reasonable to value the learning, breadth, and career optionality that consulting can create. Frame those benefits through the experience itself: exposure to industries, rapid development, problem solving, and senior client work.
If you say the main attraction is using the firm as a stepping stone, the interviewer may reasonably question your motivation. The same underlying preference can be expressed more positively as wanting a steep learning curve and broad foundation.
Build your answer around genuine reasons you would be excited to do the job for several years. Future optionality can be a secondary benefit, not the headline.
