What if the interviewer changes the question while I am answering?

Sometimes interviewers interrupt with a narrower question before I finish my original answer. Should I stop immediately and answer the new question, or finish the thought I was making first so the response does not feel incomplete?

Should I contact an interviewer after the interview if I forgot to mention one important example?

After the interview I realized I had a much stronger example for one fit question than the one I gave. I have the interviewer's contact information, but I do not want to seem like I am trying to redo the answer. Is a follow-up ever appropriate here?
